- 1 cup pasta water (Reserve this starchy water.)
- 1 whole lemon (Zested and juiced for balance.)

Instructions
- Boil pasta in a large pot of salted water until al dente, about 8-10 minutes.
- Toast the pine nuts in a large pan over medium heat until golden and fragrant, about 3 minutes.
- Cook the garlic and saffron in the same pan with extra virgin olive oil until the garlic turns light golden.
- Simmer the reserved pasta water in the pan for 2-3 minutes.
- Combine the cooked pasta with the sauce, adding toasted pine nuts, parsley, lemon zest, and juice.
