Description

Irresistible Rosemary Parmesan Pretzels with a gooey mozzarella filling, perfect for game day or movie nights.


Ingredients

Scale
  • 2 1/4 teaspoons active dry yeast
  • 1 1/2 tablespoons sugar
  • 1 cup warm water (110°F)
  • 2 3/4 cups all-purpose flour
  • 1 teaspoon salt
  • 1 tablespoon finely chopped fresh rosemary
  • 1/2 cup grated parmesan cheese
  • 12 sticks of mozzarella string cheese
  • 10 cups water
  • 2/3 cup baking soda
  • 1 large egg (beaten)
  • Coarse sea salt (for sprinkling)

Instructions

  1. Gather all ingredients and equipment.
  2. Dissolve the yeast and sugar in warm water and let sit for 5 minutes until foamy.
  3. Add flour, salt, rosemary, and parmesan cheese to the yeast mixture; mix until a dough forms.
  4. Knead the dough on a floured surface for 5-7 minutes until smooth and elastic.
  5. Place dough in a lightly oiled bowl, cover, and let rise for 1 hour until doubled in size.
  6. Preheat oven to 450°F and line a baking sheet with parchment paper.
  7. Bring 10 cups of water and baking soda to a boil in a large pot.
  8. Divide the dough into 12 pieces and wrap each around a mozzarella stick, sealing ends tightly.
  9. Boil each pretzel for 30 seconds, then remove with a slotted spoon and place on a baking sheet.
  10. Brush with beaten egg and sprinkle with coarse sea salt.
  11. Bake for 12-15 minutes until golden brown.
  12. Remove from oven and brush with melted butter before serving.

Notes

Use an airtight container for storing leftovers to keep them soft. Makes great family fun – kids can help shape the pretzels!
