Description
A quick and delectable Roasted Garlic Bread with Mozzarella that combines the rich flavors of roasted garlic with gooey mozzarella cheese.

- 1 large baguette or Italian bread loaf, sliced lengthwise
- 1 head of garlic
- 2 tablespoons olive oil
- 4 tablespoons unsalted butter, softened
- 1 teaspoon dried parsley
- 1/2 teaspoon salt
- 2 cups shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese (optional)
- Fresh parsley or basil for garnish (optional)
Instructions
- Preheat your oven to 400°F (200°C). Slice the top off the head of garlic, drizzle with 1 tablespoon olive oil, wrap in aluminum foil, and roast for 30-35 minutes until soft and golden.
- In a mixing bowl, combine the mashed roasted garlic, 4 tablespoons softened butter, remaining tablespoon of olive oil, 1 teaspoon dried parsley, and 1/2 teaspoon salt. Mix until smooth.
- Lower the oven temperature to 375°F (190°C). Place the bread halves on a baking sheet, cut-side up. Spread the garlic butter mixture evenly over each half. Sprinkle with mozzarella and Parmesan cheese if desired.
- Bake the bread for 10-12 minutes, until the cheese is melted and bubbling. Optionally, broil for an extra 1-2 minutes for a golden top.
- Garnish with fresh parsley or basil, slice, and serve warm.
Notes
This bread is best enjoyed fresh, but leftovers can be stored for up to 3 days in an airtight container.
