Description

A quick and delectable Roasted Garlic Bread with Mozzarella that combines the rich flavors of roasted garlic with gooey mozzarella cheese.


Ingredients

  • 1 large baguette or Italian bread loaf, sliced lengthwise
  • 1 head of garlic
  • 2 tablespoons olive oil
  • 4 tablespoons unsalted butter, softened
  • 1 teaspoon dried parsley
  • 1/2 teaspoon salt
  • 2 cups shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese (optional)
  • Fresh parsley or basil for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Slice the top off the head of garlic, drizzle with 1 tablespoon olive oil, wrap in aluminum foil, and roast for 30-35 minutes until soft and golden.
  2. In a mixing bowl, combine the mashed roasted garlic, 4 tablespoons softened butter, remaining tablespoon of olive oil, 1 teaspoon dried parsley, and 1/2 teaspoon salt. Mix until smooth.
  3. Lower the oven temperature to 375°F (190°C). Place the bread halves on a baking sheet, cut-side up. Spread the garlic butter mixture evenly over each half. Sprinkle with mozzarella and Parmesan cheese if desired.
  4. Bake the bread for 10-12 minutes, until the cheese is melted and bubbling. Optionally, broil for an extra 1-2 minutes for a golden top.
  5. Garnish with fresh parsley or basil, slice, and serve warm.

Notes

This bread is best enjoyed fresh, but leftovers can be stored for up to 3 days in an airtight container.
