Description

A simple yet delicious roasted chicken and potatoes recipe that’s perfect for family dinners.


Ingredients

  • 1 (5 pound) whole chicken, cut into 8 pieces
  • 2 pounds small red potatoes, halved or quartered
  • 1 large onion, cut into wedges
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cut the chicken into 8 pieces if not already done. Halve or quarter the potatoes, and cut the onion into wedges.
  3. In a large mixing bowl, combine the chicken, potatoes, and onion. Drizzle with olive oil and sprinkle salt, pepper, paprika, and garlic powder over the top. Make sure everything is well coated.
  4. Spread the chicken and vegetables in a single layer on a large baking sheet.
  5. Place the baking sheet in the preheated oven. Roast for 40-45 minutes until the chicken is golden brown and reaches an internal temperature of 165°F, and the potatoes are tender.
  6. Let the dish rest for about 5 minutes before serving.

Let the chicken sit at room temperature for about 15 minutes before roasting for juicier meat.
