- 1 (5 pound) whole chicken, cut into 8 pieces
- 2 pounds small red potatoes, halved or quartered
- 1 large onion, cut into wedges
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon paprika
- 1/2 teaspoon garlic powder
Instructions
- Preheat your oven to 400°F (200°C).
- Cut the chicken into 8 pieces if not already done. Halve or quarter the potatoes, and cut the onion into wedges.
- In a large mixing bowl, combine the chicken, potatoes, and onion. Drizzle with olive oil and sprinkle salt, pepper, paprika, and garlic powder over the top. Make sure everything is well coated.
- Spread the chicken and vegetables in a single layer on a large baking sheet.
- Place the baking sheet in the preheated oven. Roast for 40-45 minutes until the chicken is golden brown and reaches an internal temperature of 165°F, and the potatoes are tender.
- Let the dish rest for about 5 minutes before serving.

Let the chicken sit at room temperature for about 15 minutes before roasting for juicier meat.
