Quick and irresistible rhubarb fritters that are crispy on the outside and soft on the inside, perfect for brunch or dessert.
Ingredients

- 1 cup finely chopped rhubarb
- 1/4 cup sugar
- 1 cup all-purpose flour
- 1 tsp baking powder
- 1/4 tsp salt
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 1 egg
- 1/3 cup milk
- 1 tsp vanilla extract
- Oil for frying
- 1/2 cup icing sugar
- 1–2 tbsp milk (for glaze)
- 1/2 tsp vanilla (for glaze)
Instructions
- Toss rhubarb and sugar; let sit for 10 minutes.
- Whisk together dry ingredients.
- Mix wet ingredients separately and combine.
- Heat oil; drop batter into hot oil.
- Fry until golden brown, drain on paper towel, glaze, and serve.
Notes
For a vegan version, substitute the egg with a flax egg and use plant-based milk.
