Description

Quick and irresistible rhubarb fritters that are crispy on the outside and soft on the inside, perfect for brunch or dessert.


Ingredients

Scale
  • 1 cup finely chopped rhubarb
  • 1/4 cup sugar
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1 egg
  • 1/3 cup milk
  • 1 tsp vanilla extract
  • Oil for frying
  • 1/2 cup icing sugar
  • 12 tbsp milk (for glaze)
  • 1/2 tsp vanilla (for glaze)

Instructions

  1. Toss rhubarb and sugar; let sit for 10 minutes.
  2. Whisk together dry ingredients.
  3. Mix wet ingredients separately and combine.
  4. Heat oil; drop batter into hot oil.
  5. Fry until golden brown, drain on paper towel, glaze, and serve.

Notes

For a vegan version, substitute the egg with a flax egg and use plant-based milk.
