A deliciously sweet and tangy rhubarb dessert topped with a crispy graham cracker crust, perfect for any gathering.
Ingredients

- 2 cups rhubarb, chopped
- 1 cup sugar
- 1/4 cup all-purpose flour
- 1/4 cup butter, melted
- 1 teaspoon vanilla extract
- 1/2 teaspoon cinnamon
- 1 cup crushed graham crackers
- 1/2 cup chopped nuts (optional)
Instructions
- Preheat oven to 350°F (175°C).
- In a mixing bowl, combine chopped rhubarb, sugar, flour, vanilla extract, and cinnamon; mix well.
- Pour the rhubarb mixture into a greased 9×9 inch baking dish.
- In another bowl, mix crushed graham crackers with melted butter (and nuts, if using); sprinkle over the rhubarb.
- Bake for 25-30 minutes until the topping is golden brown and the rhubarb is tender.
- Let cool for at least 10 minutes before serving.
