Description

A deliciously sweet and tangy rhubarb dessert topped with a crispy graham cracker crust, perfect for any gathering.


Ingredients

  • 2 cups rhubarb, chopped
  • 1 cup sugar
  • 1/4 cup all-purpose flour
  • 1/4 cup butter, melted
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1 cup crushed graham crackers
  • 1/2 cup chopped nuts (optional)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a mixing bowl, combine chopped rhubarb, sugar, flour, vanilla extract, and cinnamon; mix well.
  3. Pour the rhubarb mixture into a greased 9×9 inch baking dish.
  4. In another bowl, mix crushed graham crackers with melted butter (and nuts, if using); sprinkle over the rhubarb.
  5. Bake for 25-30 minutes until the topping is golden brown and the rhubarb is tender.
  6. Let cool for at least 10 minutes before serving.
