Ingredients

  • 8 ounces cream cheese (softened)
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 cups Reese’s peanut butter cups (chopped)
  • 1/4 cup caramel sauce (for drizzle)

Instructions

  1. Bake large sugar cookies according to package directions and let them cool completely on a wire rack.
  2. Whisk softened cream cheese, powdered sugar, and vanilla until the frosting is light and fluffy.
  3. Spread a thick, even layer of the cheesecake mixture over the center of each cooled cookie.
  4. Press a generous amount of chopped peanut butter cups into the cream cheese to cover it.
  5. Drizzle with caramel and chill in the refrigerator for ten minutes to allow the layers to set.
