Ingredients

  • 34 lbs beef chuck roast
  • 2 cups red wine
  • 1 onion, chopped
  • 34 garlic cloves, minced
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 2 cups beef broth
  • 2 tablespoons olive oil
  • 1 teaspoon thyme
  • 1 teaspoon rosemary
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large Dutch oven, heat olive oil over medium-high heat.
  3. Season the roast with salt and pepper, searing on all sides.
  4. Remove the roast; add onions, carrots, and celery until softened.
