Instructions

  1. Preheat the Oven: Set your oven to 374°F (190°C). Prepare a 12×16 inch baking pan by lining it with parchment paper and giving it a light buttering.
  2. Whisk Ingredients: In a spacious mixing bowl, whisk together the eggs, egg yolks, sugar, and scraped vanilla seeds until the mixture is pale and frothy.
  3. Add Color: Carefully mix in red food coloring until you achieve that iconic red velvet hue.
  4. Fold in Dry Ingredients: Sift the flour and cocoa powder over your egg mixture. Gently fold it in.
  5. Bake the Cake: Evenly spread the batter in your prepared pan and bake for about 20 minutes.
  6. Cool the Sponge: Transfer the sponge onto a piece of parchment paper. Cover it gently with plastic wrap and let it cool completely.
