Chewy, soft red velvet crinkle cookies for Santa.
Ingredients

- 1/2 cup (113 grams) unsalted butter (softened)
- 1 1/4 cups (250 grams) granulated sugar
- 2 large eggs (at room temperature)
- 1 1/2 teaspoon vanilla extract
- 1/2 teaspoon red food gel
- 2 cups (250 grams) all-purpose flour
- 1/3 cup cocoa powder
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon baking soda
- 1/2 teaspoon salt
- 2/3 cup powdered sugar
Instructions
- Line a large cookie sheet with parchment paper.
- In a large bowl, cream the butter and sugar until light and fluffy with an electric mixer, about 1 minute.
- Add the eggs, vanilla, and red food gel, beating until well-mixed.
- Evenly sprinkle the flour, cocoa powder, baking powder, baking soda, and salt on top.
- Mix everything together (the dough will be stiff), and place in the fridge to chill for 2 hours.
- When ready to bake, preheat the oven to 350. Use a cookie scoop to make a dough ball from 2 tablespoons of dough. Roll it generously in powdered sugar, and then place on the baking sheet. Bake for 12-13 minutes, until the edges of the cookies are set but they’ve spread and started crackling. Bake 12 cookies at a time; recipe makes 24 cookies.
