Ingredients

  • 1 lb Lamb leg, cut into 2/3” cubes
  • 1 tablespoon Soy sauce
  • 1 tablespoon Shaoxing wine
  • 1/2 teaspoon Salt
  • 1/4 cup Cornstarch
  • 2 tablespoons Cumin powder
  • 2 teaspoons Sichuan chili flakes
  • 1/2 teaspoon Sugar
  • 1/4 teaspoon Sichuan peppercorns
  • 4 tablespoons Peanut oil
  • 1/2 cup Dried Chinese chili peppers
  • 1 small Onion, large diced
  • 1 thumb Ginger, minced
  • 5 cloves Garlic, sliced
  • 1 cup Cilantro, chopped
  • Toasted sesame seeds

Instructions

  1. Combine the lamb, soy sauce, Shaoxing wine, and salt in a large bowl. Mix well and let the flavors meld for 20 minutes at room temperature, or in the fridge overnight for a deeper taste.
  2. In a small bowl, combine the cumin powder, Sichuan chili flakes, sugar, and optional Sichuan peppercorns.
  3. Drain any excess marinade from the lamb. Gradually sprinkle cornstarch over the pieces, mixing until each lamb cube is evenly coated.
  4. Heat 3 tablespoons of oil in a large skillet over medium-high heat. Add the lamb in a single layer and cook until golden brown, then flip and cook the other side for another 30-40 seconds.
  5. In the same skillet, add the remaining tablespoon of oil along with dried Chinese chili peppers, ginger, and garlic. Stir quickly to release their fragrant aromas.
  6. Toss in the diced onion and stir-fry for about 1 minute, until it just starts to soften.
  7. Add the lamb back into the skillet and sprinkle the spice mix evenly over the top. Stir immediately to coat the lamb with the spices.
  8. Fold in the chopped cilantro and give everything a final stir. Serve hot.

Notes

  • For a spicier dish, increase the amount of Sichuan chili flakes.
  • Marinating overnight enhances flavor.
  • Serve with rice or flatbreads for a complete meal.
