Delicious raspberry white chocolate blondies, soft and chewy.

- 1/2 cup unsalted butter (1 stick, melted)
- 1 cup brown sugar (packed)
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup fresh raspberries (or frozen, thawed and drained)
- 1/2 cup white chocolate chips (or chopped white chocolate)
Instructions
- Preheat your oven to 350°F (175°C). Grease an 8×8-inch baking pan or line it with parchment paper for easy removal.
- In a medium bowl, combine the melted butter and brown sugar. Stir until well combined.
- Add the egg and vanilla extract, mixing until smooth.
- In another bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Be careful not to overmix.
- Gently fold in the raspberries and white chocolate chips, being careful not to break the raspberries.
- Pour the batter into the prepared baking pan and spread it evenly.
- Bake in the preheated oven for 25–30 minutes, or until the edges are golden and a toothpick inserted into the center comes out clean or with a few moist crumbs.
- Allow the blondies to cool in the pan for about 10 minutes, then transfer them to a wire rack to cool completely.
- Once cooled, slice into squares and serve.
