Description

Delicious raspberry white chocolate blondies, soft and chewy.


Ingredients

  • 1/2 cup unsalted butter (1 stick, melted)
  • 1 cup brown sugar (packed)
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup fresh raspberries (or frozen, thawed and drained)
  • 1/2 cup white chocolate chips (or chopped white chocolate)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease an 8×8-inch baking pan or line it with parchment paper for easy removal.
  2. In a medium bowl, combine the melted butter and brown sugar. Stir until well combined.
  3. Add the egg and vanilla extract, mixing until smooth.
  4. In another bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Be careful not to overmix.
  6. Gently fold in the raspberries and white chocolate chips, being careful not to break the raspberries.
  7. Pour the batter into the prepared baking pan and spread it evenly.
  8. Bake in the preheated oven for 25–30 minutes, or until the edges are golden and a toothpick inserted into the center comes out clean or with a few moist crumbs.
  9. Allow the blondies to cool in the pan for about 10 minutes, then transfer them to a wire rack to cool completely.
  10. Once cooled, slice into squares and serve.
