Raspberry Coconut Snowballs are a delicious and refreshing treat made with fresh raspberries and coconut.
Ingredients

- 1 cup fresh raspberries (or frozen, thawed)
- 1 cup shredded coconut (unsweetened)
- 1 cup almond flour (or finely ground almonds)
- 1/4 cup honey (or maple syrup)
- 1 teaspoon vanilla extract
- Pinch of salt
- Additional shredded coconut (for rolling)
Instructions
- In a medium bowl, gently mash the raspberries with a fork until mostly smooth, leaving some small chunks for texture.
- Add the shredded coconut, almond flour, honey, vanilla extract, and a pinch of salt to the mashed raspberries. Mix until well combined.
- Refrigerate the mixture for about 15 minutes to make it easier to handle.
- Once chilled, use your hands to scoop out small amounts of the mixture and roll them into balls, about 1 inch in diameter.
- Roll each ball in additional shredded coconut until fully coated.
- Place the finished snowballs on a parchment-lined tray and refrigerate for another 15 minutes to firm up.
- Serve chilled and enjoy your Raspberry Coconut Snowballs.
