Description

Raspberry Coconut Snowballs are a delicious and refreshing treat made with fresh raspberries and coconut.


Ingredients

  • 1 cup fresh raspberries (or frozen, thawed)
  • 1 cup shredded coconut (unsweetened)
  • 1 cup almond flour (or finely ground almonds)
  • 1/4 cup honey (or maple syrup)
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • Additional shredded coconut (for rolling)

Instructions

  1. In a medium bowl, gently mash the raspberries with a fork until mostly smooth, leaving some small chunks for texture.
  2. Add the shredded coconut, almond flour, honey, vanilla extract, and a pinch of salt to the mashed raspberries. Mix until well combined.
  3. Refrigerate the mixture for about 15 minutes to make it easier to handle.
  4. Once chilled, use your hands to scoop out small amounts of the mixture and roll them into balls, about 1 inch in diameter.
  5. Roll each ball in additional shredded coconut until fully coated.
  6. Place the finished snowballs on a parchment-lined tray and refrigerate for another 15 minutes to firm up.
  7. Serve chilled and enjoy your Raspberry Coconut Snowballs.
