Description

A refreshing and nutritious quinoa salad packed with fresh vegetables and a zesty dressing.


Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions

  1. Rinse quinoa under cold water to remove bitterness.
  2. Combine quinoa and water in a pot, then bring to a boil.
  3. Reduce heat to low, cover, and simmer for 15 minutes.
  4. Let quinoa cool, then fluff with a fork.
  5. Mix vegetables and parsley in a large bowl.
  6. Whisk together olive oil, lemon juice, salt, and pepper in a small bowl.
  7. Combine quinoa with the vegetable mixture and dressing.
  8. Serve chilled or at room temperature.
