- 1/2 cup whole wheat flour
- 3 tbsp sugar
- 2 tsp baking powder
- 2 tsp pumpkin pie spice
- Dash of salt
- 1 cup milk
- 2/3 cup pumpkin puree
- 2 tbsp vegetable oil
- 1 egg
- 2 tsp butter for greasing the waffle iron
Instructions
- In a large bowl, combine the all-purpose flour, whole wheat flour, sugar, baking powder, pumpkin pie spice, and a dash of salt. Stir well to evenly distribute all dry ingredients.
- In a separate bowl, beat the egg and then whisk in the milk, vegetable oil, and pumpkin puree until the mixture is smooth and well blended.
- Pour the wet ingredients into the bowl with the dry ingredients. Gently fold together just until the batter is moistened; do not overmix to maintain waffle fluffiness.
- Preheat your waffle iron according to the manufacturer’s instructions. Once hot, lightly grease it with butter to prevent sticking and to add flavor.
- Using a 1/3 cup measuring cup, scoop about 1/4 to 1/3 cup of batter onto the center of the waffle iron. Cook until the waffles are golden brown and crisp on both sides. Remove carefully and serve warm.
