Ingredients

  • 3/4 cup all-purpose flour
  • 1/2 cup whole wheat flour
  • 3 tbsp sugar
  • 2 tsp baking powder
  • 2 tsp pumpkin pie spice
  • Dash of salt
  • 1 cup milk
  • 2/3 cup pumpkin puree
  • 2 tbsp vegetable oil
  • 1 egg
  • 2 tsp butter for greasing the waffle iron

Instructions

  1. In a large bowl, combine the all-purpose flour, whole wheat flour, sugar, baking powder, pumpkin pie spice, and a dash of salt. Stir well to evenly distribute all dry ingredients.
  2. In a separate bowl, beat the egg and then whisk in the milk, vegetable oil, and pumpkin puree until the mixture is smooth and well blended.
  3. Pour the wet ingredients into the bowl with the dry ingredients. Gently fold together just until the batter is moistened; do not overmix to maintain waffle fluffiness.
  4. Preheat your waffle iron according to the manufacturer’s instructions. Once hot, lightly grease it with butter to prevent sticking and to add flavor.
  5. Using a 1/3 cup measuring cup, scoop about 1/4 to 1/3 cup of batter onto the center of the waffle iron. Cook until the waffles are golden brown and crisp on both sides. Remove carefully and serve warm.
