Description

Delicious and easy-to-make Pumpkin Cinnamon Crumble Cookies that blend the warm spices of fall with the rich flavor of pumpkin.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1 cup brown sugar
  • 1/2 cup pumpkin puree
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 cup rolled oats
  • 1/2 cup chopped nuts or chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together flour, cinnamon, nutmeg, baking soda, and salt.
  3. In another bowl, cream together butter and brown sugar until light and fluffy.
  4. Mix in pumpkin puree.
  5. Gradually add dry ingredients to wet ingredients, mixing until combined.
  6. Stir in oats and any optional ingredients.
  7. Drop rounded tablespoons onto a baking sheet lined with parchment paper.
  8. Bake for 12-15 minutes or until edges are golden.
  9. Allow to cool before serving.
