- 1/2 cup rolled oats

Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, whisk together flour, cinnamon, nutmeg, baking soda, and salt.
- In another bowl, cream together butter and brown sugar until light and fluffy.
- Mix in pumpkin puree.
- Gradually add dry ingredients to wet ingredients, mixing until combined.
- Stir in oats and any optional ingredients.
- Drop rounded tablespoons onto a baking sheet lined with parchment paper.
- Bake for 12-15 minutes or until edges are golden.
- Allow to cool before serving.
