- 1/2 cup granulated sugar

Instructions
- In a medium saucepan, combine water, butter, 1/4 cup sugar, pumpkin pie spice, and salt. Bring to a boil over medium heat.
- Remove from heat and stir in flour until a smooth dough forms.
- Return the saucepan to low heat and cook, stirring constantly, for 1-2 minutes until the dough pulls away from the sides of the pan.
- Transfer the dough to a mixing bowl. Let it cool for 5 minutes.
- Beat in the eggs one at a time until fully incorporated.
- Stir in the pumpkin puree until the dough is smooth and evenly colored. This is your pumpkin churro dough.
- Heat about 3 inches of vegetable oil in a deep pot or Dutch oven to 375°F (190°C).
- Transfer the pumpkin churro dough to a piping bag fitted with a large star tip.
- Carefully pipe 4-6 inch strips of dough into the hot oil. Do not overcrowd the pot.
- Fry the pumpkin churros for 2-3 minutes per side, until golden brown and cooked through.
