Ingredients

  • 1/2 cup unsalted butter
  • 1/4 cup granulated sugar
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon salt
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1/2 cup pumpkin puree
  • Vegetable oil for frying
  • 1/2 cup granulated sugar
  • 1 tablespoon ground cinnamon

Instructions

  1. In a medium saucepan, combine water, butter, 1/4 cup sugar, pumpkin pie spice, and salt. Bring to a boil over medium heat.
  2. Remove from heat and stir in flour until a smooth dough forms.
  3. Return the saucepan to low heat and cook, stirring constantly, for 1-2 minutes until the dough pulls away from the sides of the pan.
  4. Transfer the dough to a mixing bowl. Let it cool for 5 minutes.
  5. Beat in the eggs one at a time until fully incorporated.
  6. Stir in the pumpkin puree until the dough is smooth and evenly colored. This is your pumpkin churro dough.
  7. Heat about 3 inches of vegetable oil in a deep pot or Dutch oven to 375°F (190°C).
  8. Transfer the pumpkin churro dough to a piping bag fitted with a large star tip.
  9. Carefully pipe 4-6 inch strips of dough into the hot oil. Do not overcrowd the pot.
  10. Fry the pumpkin churros for 2-3 minutes per side, until golden brown and cooked through.
  11. Remove the churros from the oil with a slotted spoon and drain on paper towels.
  12. In a shallow dish, combine 1/2 cup sugar and cinnamon for your pumpkin churros coating.
  13. Toss the warm churros in the cinnamon sugar mixture until evenly coated.
