A sophisticated version of the classic grilled cheese, featuring flaky puff pastry filled with gooey cheese.
Ingredients

- 2 sheets puff pastry (about 500 g / 17.6 oz)
- 200 g (7 oz) sharp cheddar cheese, sliced
- 100 g (3.5 oz) Gruyère cheese, sliced
- 30 g (2 tbsp) unsalted butter, melted
- 15 ml (1 tbsp) Dijon mustard (optional)
- 1 large egg, beaten with 15 ml (1 tbsp) water (for egg wash)
- Flaky sea salt, to taste
- Freshly ground black pepper, to taste
Instructions
- Thaw and chill the puff pastry.
- Cut and dock the pastry.
- Assemble sandwiches.
- Brush with egg wash and bake.
- Heat a skillet and finish cooking.
- Let rest and serve.

Make-ahead by assembling and freezing; bake from frozen with additional time.
