  • 6 medium red potatoes, quartered
  • 1/8 cup olive oil
  • 1/2 teaspoon garlic salt
  • 1/2 teaspoon dried rosemary
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon paprika
  • Salt and black pepper, to taste
  • 2 tablespoons grated Parmesan cheese (optional)
  • Fresh chopped parsley for garnish (optional)

Instructions

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. Wash and quarter the potatoes, keeping pieces evenly sized.
  3. In a large bowl, mix olive oil, garlic salt, rosemary, thyme, oregano, paprika, salt, and pepper.
  4. Add potatoes to the bowl and toss until fully coated.
  5. Spread potatoes in a single layer on the baking sheet. Roast for 30–40 minutes, flipping halfway, until golden and crispy.
  6. Sprinkle with Parmesan cheese immediately after baking if using. Garnish with fresh parsley and serve hot.
