- 6 medium red potatoes, quartered
- 1/8 cup olive oil
- 1/2 teaspoon garlic salt
- 1/2 teaspoon dried rosemary
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried oregano
- 1/2 teaspoon paprika
- Salt and black pepper, to taste
- 2 tablespoons grated Parmesan cheese (optional)
- Fresh chopped parsley for garnish (optional)
Instructions
- Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
- Wash and quarter the potatoes, keeping pieces evenly sized.
- In a large bowl, mix olive oil, garlic salt, rosemary, thyme, oregano, paprika, salt, and pepper.
- Add potatoes to the bowl and toss until fully coated.
- Spread potatoes in a single layer on the baking sheet. Roast for 30–40 minutes, flipping halfway, until golden and crispy.
- Sprinkle with Parmesan cheese immediately after baking if using. Garnish with fresh parsley and serve hot.
