Description

Ingredients

  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 pound cooked shrimp, finely chopped
  • 2 cups mashed potatoes
  • 1/4 cup chopped fresh parsley
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup breadcrumbs
  • Vegetable oil for frying

Instructions

  1. Heat olive oil in a skillet over medium heat. Add onion and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more.
  2. In a bowl, combine the cooked shrimp, mashed potatoes, chopped parsley, salt, and pepper. Stir in the onion and garlic mixture.
  3. Shape the shrimp mixture into small croquettes, about 2 inches long.
  4. Set up a breading station with three shallow dishes: one with flour, one with beaten eggs, and one with breadcrumbs.
  5. Dredge each croquette first in flour, then dip in the egg, and finally coat with breadcrumbs.
  6. Heat about 2 inches of vegetable oil in a deep skillet or pot to 350°F (175°C).
  7. Fry the croquettes in batches until golden brown and heated through, about 3-4 minutes.
  8. Remove croquettes with a slotted spoon and drain on paper towels.
  9. Serve your Portuguese shrimp croquettes hot.
