- 4 chicken thighs (bone-in, skin-on)
- 4 chicken drumsticks
- 1/4 cup olive oil
- 1/4 cup lemon juice
- 4 cloves garlic, minced
- 2 tablespoons piri-piri sauce (or another hot sauce)
- 1 teaspoon smoked paprika
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Fresh parsley, chopped (for garnish)
Instructions
- In a large mixing bowl, whisk together olive oil, lemon juice, minced garlic, piri-piri sauce, smoked paprika, oregano, salt, and black pepper.
- Add the chicken thighs and drumsticks to the marinade. Ensure they are well-coated. Cover and refrigerate for at least 30 minutes or up to 4 hours for more flavor.
- Preheat your grill to medium-high heat (about 375°F to 400°F or 190°C to 200°C).
- Remove the chicken from the marinade and place it on the grill. Cook for 30-40 minutes, turning occasionally, until the internal temperature reaches 165°F (75°C).
- For extra flavor, place the chicken skin-side down during the last few minutes of grilling to achieve a crispy texture.
- Remove the chicken from the grill and let it rest for 5-10 minutes to allow the juices to redistribute.
- Before serving, sprinkle fresh chopped parsley over the chicken for a burst of color and flavor.
