- 100ml strong coffee
- 200g savoiardi sponge fingers
- 300ml double cream
- 75g icing sugar
- 250g mascarpone
- 100g pistachio paste
- Chopped pistachios for garnish
Instructions
- Prepare your ingredients by gathering and measuring everything.
- Brew strong coffee and allow it to cool.
- Whip the double cream and icing sugar until soft peaks form.
- Fold in the mascarpone and pistachio paste.
- Soak each sponge finger in coffee for a couple of seconds on each side.
- Layer the soaked sponge fingers and pistachio cream mixture in a serving dish.
- Pipe extra pistachio paste on top and decorate.
- Chill in the refrigerator for at least 6 hours before serving.
- Remove from fridge for 20 minutes before serving and garnish with chopped pistachios.
