Description

Deliciously moist breakfast bread combining nutty pistachios and zesty lemon, topped with a luscious lemon glaze.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 cup shelled pistachios, finely chopped
  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3 large eggs
  • 1/2 cup vegetable oil
  • 1/2 cup plain yogurt
  • 1/4 cup milk
  • 1 teaspoon vanilla extract
  • Zest of 1 lemon

Instructions

  1. Preheat the oven to 350°F (175°C) and grease and flour a loaf pan.
  2. In a large bowl, combine flour, baking powder, baking soda, salt, and chopped pistachios.
  3. In another bowl, whisk together eggs, vegetable oil, yogurt, milk, vanilla extract, and lemon zest.
  4. Gently fold the wet mixture into the dry ingredients until just combined.
  5. Pour the batter into the prepared loaf pan and bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
  6. Cool the bread in the pan for 10 minutes, then transfer to a wire rack.
  7. For the glaze, mix powdered sugar with lemon juice until smooth and drizzle over the cooled bread.
