- 1 cup shelled pistachios, finely chopped

- 1 teaspoon baking powder
- 1/2 teaspoon baking soda

- 3 large eggs
- 1/2 cup vegetable oil
- 1/2 cup plain yogurt
- 1/4 cup milk
- 1 teaspoon vanilla extract
- Zest of 1 lemon
Instructions
- Preheat the oven to 350°F (175°C) and grease and flour a loaf pan.
- In a large bowl, combine flour, baking powder, baking soda, salt, and chopped pistachios.
- In another bowl, whisk together eggs, vegetable oil, yogurt, milk, vanilla extract, and lemon zest.
- Gently fold the wet mixture into the dry ingredients until just combined.
- Pour the batter into the prepared loaf pan and bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
- Cool the bread in the pan for 10 minutes, then transfer to a wire rack.
- For the glaze, mix powdered sugar with lemon juice until smooth and drizzle over the cooled bread.
