Ingredients

  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 cup fresh pineapple chunks (or canned, drained)
  • 1 red bell pepper, sliced
  • 1 cup snap peas
  • 1 cup broccoli florets
  • 1 tablespoon vegetable oil
  • 2 cups cooked rice (white or brown)
  • 1/2 cup teriyaki sauce
  • 2 green onions, sliced (for garnish)
  • Sesame seeds (for garnish)

Instructions

  1. In a bowl, combine chicken pieces with half of the teriyaki sauce. Let it marinate for at least 15 minutes.
  2. In a large skillet or wok, heat the vegetable oil over medium-high heat.
  3. Add the marinated chicken to the skillet and cook for 5-7 minutes until browned and cooked through. Remove the chicken and set aside.
  4. In the same skillet, add the red bell pepper, snap peas, and broccoli florets. Stir-fry for 3-5 minutes until they are vibrant and tender-crisp.
  5. Return the chicken to the skillet, along with the pineapple chunks and the remaining teriyaki sauce. Stir well to combine and heat through for another 2-3 minutes.
  6. While the chicken and vegetables are cooking, prepare your rice according to package instructions.
  7. Divide the cooked rice among serving bowls. Top each bowl with the chicken and vegetable mixture.
  8. Sprinkle sliced green onions and sesame seeds over the top for added flavor and presentation.
