- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 cup fresh pineapple chunks (or canned, drained)
- 1 red bell pepper, sliced
- 1 cup snap peas
- 1 cup broccoli florets
- 1 tablespoon vegetable oil
- 2 cups cooked rice (white or brown)
- 1/2 cup teriyaki sauce
- 2 green onions, sliced (for garnish)
- Sesame seeds (for garnish)
Instructions
- In a bowl, combine chicken pieces with half of the teriyaki sauce. Let it marinate for at least 15 minutes.
- In a large skillet or wok, heat the vegetable oil over medium-high heat.
- Add the marinated chicken to the skillet and cook for 5-7 minutes until browned and cooked through. Remove the chicken and set aside.
- In the same skillet, add the red bell pepper, snap peas, and broccoli florets. Stir-fry for 3-5 minutes until they are vibrant and tender-crisp.
- Return the chicken to the skillet, along with the pineapple chunks and the remaining teriyaki sauce. Stir well to combine and heat through for another 2-3 minutes.
- While the chicken and vegetables are cooking, prepare your rice according to package instructions.
- Divide the cooked rice among serving bowls. Top each bowl with the chicken and vegetable mixture.
- Sprinkle sliced green onions and sesame seeds over the top for added flavor and presentation.
