Ingredients

  • 1 cup milk (or a dairy-free alternative)
  • 1 egg
  • 1 tablespoon melted butter (or coconut oil)
  • 1 cup crushed pineapple, drained
  • 1/2 teaspoon vanilla extract
  • 1 cup coconut cream
  • 1/4 cup maple syrup
  • 1/2 teaspoon vanilla extract

Instructions

  1. Gather all your ingredients. Make sure to drain the crushed pineapple well.
  2. In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  3. In a separate bowl, mix milk, egg, melted butter, vanilla extract, and crushed pineapple.
  4. Pour the wet mixture into the dry ingredients and stir gently until just combined.
  5. Heat a non-stick skillet over medium heat and lightly grease if needed.
  6. Pour 1/4 cup of batter onto the skillet and cook until bubbles form on the surface. Flip and cook until golden brown.
  7. In a saucepan, combine coconut cream, maple syrup, and vanilla extract. Heat until warm.
  8. Serve pancakes warm topped with coconut syrup.
