Ingredients

  • 2 cups fresh pineapple, crushed (about 1 medium pineapple)
  • 1 cup heavy cream
  • 1 cup sweetened condensed milk
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Prepare the pineapple by peeling, coring, and cutting into chunks. Blend until smooth, leaving some texture if desired.
  2. In a mixing bowl, combine the crushed pineapple, heavy cream, sweetened condensed milk, lemon juice, vanilla extract, and a pinch of salt. Stir well until smooth.
  3. Taste and adjust sweetness or acidity as needed.
  4. Pour the mixture into an airtight container, smoothing the top.
  5. Freeze for 4-6 hours, or until firm and scoopable.
  6. Serve and enjoy, optionally garnishing with fresh pineapple chunks or mint.
