  • 1 cup Glutinous Rice Flour (key ingredient for chewy texture)
  • 1/4 cup Sugar (enhances sweetness)
  • 3/4 cup Water (helps achieve dough consistency)
  • 1/4 cup Cornstarch (prevents sticking)

Instructions

  1. In a bowl, mix the peanut butter and sweetened condensed milk until smooth. Chill in the refrigerator for about 15 minutes.
  2. In a nonstick pan, whisk together the glutinous rice flour, sugar, and water over medium heat, stirring constantly until it thickens into a sticky dough (about 5-7 minutes).
  3. Dust a surface with cornstarch, place the dough on it, and roll into a ¼-inch thick rectangle. Cut into 8 equal pieces.
  4. Scoop a tablespoon of the chilled filling, shape into a ball, and place in the center of a dough piece. Pinch edges to seal tightly.
  5. Place filled mochi seam-side down on a cornstarch-dusted surface and repeat until all pieces are filled and sealed.
  6. Chill or serve immediately. For firmer bites, freeze for about an hour.
