- 1/4 cup Cornstarch (prevents sticking)
Instructions
- In a bowl, mix the peanut butter and sweetened condensed milk until smooth. Chill in the refrigerator for about 15 minutes.
- In a nonstick pan, whisk together the glutinous rice flour, sugar, and water over medium heat, stirring constantly until it thickens into a sticky dough (about 5-7 minutes).
- Dust a surface with cornstarch, place the dough on it, and roll into a ¼-inch thick rectangle. Cut into 8 equal pieces.
- Scoop a tablespoon of the chilled filling, shape into a ball, and place in the center of a dough piece. Pinch edges to seal tightly.
- Place filled mochi seam-side down on a cornstarch-dusted surface and repeat until all pieces are filled and sealed.
- Chill or serve immediately. For firmer bites, freeze for about an hour.
