Description

A delightful Italian classic dessert featuring layers of mascarpone and espresso-soaked Savoiardi biscuits.


Ingredients

  • 4 large egg yolks
  • 1 cup mascarpone cheese
  • 3/4 cup sugar
  • 1 cup espresso
  • Savoiardi biscuits
  • Cocoa powder (for dusting)

Instructions

  1. Prepare your ingredients by gathering all and measuring them out (5 minutes).
  2. Brew one cup of strong espresso and stir in 2 tablespoons of sugar until dissolved (5 minutes).
  3. In a mixing bowl, combine egg yolks and the remaining sugar. Beat until pale and creamy, then over a double boiler, continue beating until it reaches 150°F (10 minutes).
  4. Remove from heat and gently fold in the mascarpone cheese until smooth (3 minutes).
  5. Quickly dip each Savoiardi biscuit into the cooled espresso and layer in a serving dish (5 minutes).
  6. Add layers of soaked biscuits and mascarpone mixture, finishing with mascarpone. Cover and refrigerate for at least 4 hours or overnight (15-20 minutes).
  7. Before serving, dust with cocoa powder and slice into squares (5 minutes).

Notes

For best results, serve chilled and enjoy within 2 days for optimal freshness.
