- 4 large egg yolks
- 1 cup mascarpone cheese
- 3/4 cup sugar
- 1 cup espresso
- Savoiardi biscuits
- Cocoa powder (for dusting)
Instructions
- Prepare your ingredients by gathering all and measuring them out (5 minutes).
- Brew one cup of strong espresso and stir in 2 tablespoons of sugar until dissolved (5 minutes).
- In a mixing bowl, combine egg yolks and the remaining sugar. Beat until pale and creamy, then over a double boiler, continue beating until it reaches 150°F (10 minutes).
- Remove from heat and gently fold in the mascarpone cheese until smooth (3 minutes).
- Quickly dip each Savoiardi biscuit into the cooled espresso and layer in a serving dish (5 minutes).
- Add layers of soaked biscuits and mascarpone mixture, finishing with mascarpone. Cover and refrigerate for at least 4 hours or overnight (15-20 minutes).
- Before serving, dust with cocoa powder and slice into squares (5 minutes).
