Oreo Pancake Stack with White Chocolate

Each bite is fluffy, creamy, and downright indulgent. Serve them up with a drizzle of white chocolate and you have a breakfast or dessert that will impress anyone.

  • 1 cup all-purpose flour
  • 1/4 cup cocoa powder
  • 1/4 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup whole milk (or milk alternative)
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 tablespoons unsalted butter, melted
  • 810 crushed Oreo cookies
  • 1/2 cup white chocolate chips
  • 2 tablespoons heavy cream
  • Cocoa powder (for dusting)
  • Extra crushed Oreos
  • Whipped cream (optional)

Instructions

  1. In a large bowl, whisk together the flour, cocoa powder, sugar, baking powder, baking soda, and salt. In another bowl, mix the milk, egg, vanilla extract, and melted butter.
  2. Gradually add the wet ingredients to the dry ingredients. Whisk until just combined. Then, fold in the crushed Oreo cookies.
  3. Heat a nonstick skillet or griddle over medium heat and lightly grease it with butter or cooking spray. Pour 1/4 cup of batter for each pancake onto the skillet. Cook until bubbles form on the surface, about 2 minutes. Flip and cook the other side for 1-2 minutes until cooked through. Repeat with the remaining batter.
  4. In a microwave-safe bowl, melt the white chocolate chips and heavy cream in 20-second intervals, stirring after each until smooth and pourable.
  5. Stack the pancakes on a serving plate. Drizzle the white chocolate sauce generously over the stack.
  6. Dust the stack with cocoa powder and sprinkle with extra crushed Oreos. Add a dollop of whipped cream if desired. Serve immediately and enjoy this indulgent treat!
