One-Pot Cheesy Chicken Broccoli Tortellini is a quick and comforting meal featuring cheese-filled tortellini, tender chicken, and crisp broccoli in a creamy sauce.

- 1 tsp Olive Oil
- 2 cloves Garlic, minced
- 1 ½ cups Low-Sodium Chicken Broth
- 1 cup Milk (whole milk recommended)
- 1 (20 oz) package Cheese Tortellini (fresh or refrigerated)
- 3 cups Fresh Broccoli, chopped into florets
- 1 (8 oz) package Cream Cheese, cut into cubes
- ½ cup Grated Parmesan Cheese
- 2 cups Cooked Chicken, diced (rotisserie recommended)
- Salt and Black Pepper, to taste
Instructions
- In a large pot or Dutch oven, heat olive oil over medium-high heat. Add minced garlic and sauté for 30 seconds until fragrant.
- Pour in chicken broth and milk. Bring the mixture to a gentle boil.
- Add tortellini and cook for 2 minutes. Add chopped broccoli florets and continue cooking for about 3 more minutes, until the tortellini is tender and the broccoli is crisp-tender.
- Reduce heat to low. Add the cream cheese cubes and Parmesan cheese. Stir constantly until melted and smooth.
- Stir in cooked chicken until heated through. Season with salt and pepper to taste. Serve immediately with extra Parmesan on top.
Notes
- This recipe uses rotisserie chicken to save time.
- Feel free to add more vegetables if desired.
- Extra Parmesan can be sprinkled on top before serving.
