Description

One-Pot Cheesy Chicken Broccoli Tortellini is a quick and comforting meal featuring cheese-filled tortellini, tender chicken, and crisp broccoli in a creamy sauce.


Ingredients

  • 1 tsp Olive Oil
  • 2 cloves Garlic, minced
  • 1 ½ cups Low-Sodium Chicken Broth
  • 1 cup Milk (whole milk recommended)
  • 1 (20 oz) package Cheese Tortellini (fresh or refrigerated)
  • 3 cups Fresh Broccoli, chopped into florets
  • 1 (8 oz) package Cream Cheese, cut into cubes
  • ½ cup Grated Parmesan Cheese
  • 2 cups Cooked Chicken, diced (rotisserie recommended)
  • Salt and Black Pepper, to taste

Instructions

  1. In a large pot or Dutch oven, heat olive oil over medium-high heat. Add minced garlic and sauté for 30 seconds until fragrant.
  2. Pour in chicken broth and milk. Bring the mixture to a gentle boil.
  3. Add tortellini and cook for 2 minutes. Add chopped broccoli florets and continue cooking for about 3 more minutes, until the tortellini is tender and the broccoli is crisp-tender.
  4. Reduce heat to low. Add the cream cheese cubes and Parmesan cheese. Stir constantly until melted and smooth.
  5. Stir in cooked chicken until heated through. Season with salt and pepper to taste. Serve immediately with extra Parmesan on top.

Notes

  • This recipe uses rotisserie chicken to save time.
  • Feel free to add more vegetables if desired.
  • Extra Parmesan can be sprinkled on top before serving.
