Description

One Pan Cowboy Butter Tortellini Steak Bites is a simple yet decadent meal featuring steak bites in a rich cowboy butter sauce, paired with cheese tortellini.


Ingredients

  • 1 ½ lbs sirloin or ribeye steak, cut into bite-sized cubes
  • 1 tsp Cajun seasoning
  • ½ tsp smoked paprika
  • ½ tsp garlic powder
  • Salt & black pepper, to taste
  • 2 tbsp olive oil
  • 6 tbsp unsalted butter
  • 4 cloves garlic, minced
  • ½ tsp red pepper flakes (optional, for heat)
  • 1 tsp Dijon mustard
  • Juice of 1 lemon
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp fresh chives, chopped
  • 12 oz cheese tortellini (fresh or refrigerated)
  • ½ cup grated Parmesan cheese

Instructions

  1. Pat the steak dry and cut into uniform 1-inch pieces. Season with Cajun seasoning, smoked paprika, garlic powder, salt, and black pepper.
  2. In a bowl, melt the butter. Stir in minced garlic, red pepper flakes, Dijon mustard, lemon juice, parsley, and chives. Season with salt and pepper.
  3. Heat olive oil in a skillet over medium-high heat. Add steak bites in a single layer. Sear for 2-3 minutes per side until golden brown. Remove and cover with foil to rest.
  4. Deglaze the pan with water or chicken broth. Add tortellini and cook according to package directions until tender.
  5. Return steak to the skillet with tortellini. Pour cowboy butter over everything and add Parmesan cheese. Toss to coat and heat through for 1-2 minutes. Serve immediately.

  • Use a cast iron skillet for better searing.
  • Adjust red pepper flakes according to your heat preference.
  • Garnish with extra parsley or chives if desired.
