Description

Indulge in this festive Non-Alcoholic Berry Spekulatius Tiramisu, where spiced cookies meet creamy mascarpone and refreshing berries. Perfect for any occasion, this dessert is a delightful twist on a classic favorite.


Ingredients

  • 250g Mascarpone Cheese
  • 100g Powdered Sugar
  • 250ml Whipping Cream
  • 1 cup Strong Coffee or Espresso (cooled)
  • Spekulatius Cookies (or gingerbread/spiced biscuit)
  • Non-Alcoholic Beeren (fresh raspberries, strawberries, blueberries or frozen berries)
  • Sugar (for berries, optional)
  • Unsweetened Cocoa Powder

Instructions

  1. Brew about 1 cup of strong coffee or espresso. If using decaf, ensure it’s cooled down. Set aside.
  2. In a large bowl, combine 250g of mascarpone cheese with 100g of powdered sugar. Whip until smooth and creamy.
  3. In another bowl, whip 250ml of heavy cream until stiff peaks form. Gently fold this into the mascarpone mixture, being careful not to deflate the whipped cream.
  4. If using fresh berries, wash and dry them. If using frozen, make sure they’re completely thawed and drained. You can mix them with a tablespoon of sugar if you want them a bit sweeter.
  5. Quickly dip each Spekulatius cookie into the cooled coffee, ensuring they soak just enough to soften without falling apart.
  6. In a rectangular dish, create a layer of soaked cookies. Spread half of the mascarpone mixture over the cookies, followed by half of the berries. Repeat this process with another layer of cookies, mascarpone mixture, and top with the remaining berries.
  7. Cover the dish with plastic wrap and refrigerate for at least 4 hours, or overnight if possible. This allows the flavors to meld beautifully.
  8. Before serving, dust the top with unsweetened cocoa powder. You can also add a few extra fresh berries for garnish.
