Ingredients

- 2 lbs (900g) beef chuck, cut into 1-inch cubes
- 4 cups (960ml) beef broth
- 2 cups (300g) carrots, sliced
- 1 cup (150g) potatoes, diced
- 1 cup (150g) onions, chopped
- 3 cloves garlic, minced
- 2 tbsp tomato paste
- 1 tsp dried thyme
- 1 tsp dried rosemary
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Heat the olive oil in a large pot over medium heat. Add the beef cubes and brown on all sides.
- Add the onions and garlic, cooking until the onions are translucent.
- Stir in the tomato paste, thyme, and rosemary. Cook for 2 minutes.
- Add the beef broth, carrots, and potatoes. Bring to a boil.
- Reduce heat to low, cover, and simmer for 1.5 to 2 hours until the beef is tender.
- Season with salt and pepper to taste before serving.
Notes
- Serve with crusty bread for a complete meal.
- You can add other vegetables like peas or green beans if desired.
- This stew can be made a day ahead for better flavor.
