Description

Ingredients

  • 2 lbs (900g) beef chuck, cut into 1-inch cubes
  • 4 cups (960ml) beef broth
  • 2 cups (300g) carrots, sliced
  • 1 cup (150g) potatoes, diced
  • 1 cup (150g) onions, chopped
  • 3 cloves garlic, minced
  • 2 tbsp tomato paste
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the beef cubes and brown on all sides.
  2. Add the onions and garlic, cooking until the onions are translucent.
  3. Stir in the tomato paste, thyme, and rosemary. Cook for 2 minutes.
  4. Add the beef broth, carrots, and potatoes. Bring to a boil.
  5. Reduce heat to low, cover, and simmer for 1.5 to 2 hours until the beef is tender.
  6. Season with salt and pepper to taste before serving.

Notes

  • Serve with crusty bread for a complete meal.
  • You can add other vegetables like peas or green beans if desired.
