Description

A delicious and healthy no-bake vegan pie made with fresh blueberries and chia seeds.


Ingredients

Scale
  • 1 1/2 cups almond blend (crushed)
  • 1/4 cup dates (pitted)
  • Blueberries (fresh or frozen)
  • Chia seeds
  • Coconut milk (or any plant-based milk)
  • Maple syrup (optional)
  • Vanilla extract

Instructions

  1. Prep your ingredients by measuring out the almond blend, pitting the dates, and cleaning the blueberries (5 minutes).
  2. In a food processor, combine the crushed almond blend and pitted dates. Pulse until crumbly (5 minutes).
  3. Press the crust mixture evenly into the bottom of a pie dish (5 minutes).
  4. In a bowl, combine blueberries, chia seeds, coconut milk, and maple syrup. Stir well (5 minutes).
  5. Pour the blueberry mixture over the crust and refrigerate for at least two hours until set (10 minutes).
  6. Serve chilled and enjoy.

Notes

Store leftover pie in an airtight container in the refrigerator for up to 5 days. Can be made 2 days in advance.
