A delicious and healthy no-bake vegan pie made with fresh blueberries and chia seeds.
Ingredients

- 1 1/2 cups almond blend (crushed)
- 1/4 cup dates (pitted)
- Blueberries (fresh or frozen)
- Chia seeds
- Coconut milk (or any plant-based milk)
- Maple syrup (optional)
- Vanilla extract
Instructions
- Prep your ingredients by measuring out the almond blend, pitting the dates, and cleaning the blueberries (5 minutes).
- In a food processor, combine the crushed almond blend and pitted dates. Pulse until crumbly (5 minutes).
- Press the crust mixture evenly into the bottom of a pie dish (5 minutes).
- In a bowl, combine blueberries, chia seeds, coconut milk, and maple syrup. Stir well (5 minutes).
- Pour the blueberry mixture over the crust and refrigerate for at least two hours until set (10 minutes).
- Serve chilled and enjoy.
Notes
Store leftover pie in an airtight container in the refrigerator for up to 5 days. Can be made 2 days in advance.
