Instructions
- In a bowl, combine crushed gingerbread cookies and melted butter until it resembles wet sand.
- Press the crumb mixture evenly into the bottom of serving cups.
- In a separate bowl, beat softened cream cheese and powdered sugar until smooth.
- Add ground ginger, cinnamon, and vanilla extract into the cream cheese mixture and mix well.
- Fold in whipped cream gently until combined.
- Spoon or pipe the cream cheese filling over the crust in each cup.
- Refrigerate for at least 2 hours to set before serving.
