- 8 pieces Flour Tortillas (10” sized tortillas for best results)
- 8 oz Cream Cheese (Softened for easy mixing)
- 4 oz Diced Green Chilies (Canned is most convenient)
- 1 cup Cheddar Cheese (Shredded for even melting)
- 1 medium Red Onion (Yellow onion can be used for a milder taste)
- 1 medium Bell Pepper (Finely diced for better texture)
- 1/2 cup Sour Cream (Use in filling and as a dipping sauce)
- 1 tsp Paprika (Smoked paprika can impart a unique taste)
- 1 tsp Garlic Powder (Fresh minced garlic can be an alternative)
- 1 tsp Onion Powder (Omit if using fresh onions extensively)
- 1/2 tsp Cayenne (Adjust according to heat preference)
Instructions
- Preheat your oven to 350°F and line a baking sheet with parchment paper.
- In a large bowl, mix together the softened cream cheese, diced green chilies, cheddar cheese, red onion, bell pepper, sour cream, paprika, garlic powder, onion powder, and cayenne. Stir until smooth and creamy, about 2-3 minutes.
- Take a flour tortilla, spread a generous amount of the filling evenly across it, roll it up tightly, and cut each roll into 5 pieces. Discard the ends.
- Arrange the filled antojitos on the prepared baking sheet, cut side up, and bake for 8 minutes.
- Switch the oven to high broil and broil the antojitos for an additional 5 minutes until golden brown.
- Let the antojitos cool for a few minutes before serving them with a bowl of basil pesto sour cream for dipping.
