  • 1/2 cup aquafaba (egg substitute)
  • 1 cup granulated sugar or coconut sugar
  • 1/4 cup ground flaxseed (egg alternative)
  • 1 tsp vanilla extract
  • 1 cup Biscoff cookie butter spread (the star ingredient)
  • 8 cookies Biscoff Cookies (crumbled on top)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 10″ skillet.
  2. Melt the vegan butter or coconut oil in a microwave-safe bowl; stir in vegan chocolate chips until smooth, then let cool.
  3. In a large bowl, combine aquafaba, sugar, ground flaxseed, and vanilla extract with a hand mixer until frothy. Mix in the melted chocolate mixture until creamy.
  4. Sift in the flour, cocoa powder, espresso powder, baking powder, and sea salt, mixing until just combined.
  5. Fold in the additional chocolate chips.
  6. Pour half the batter into the skillet. Drizzle Biscoff cookie butter on top and add crumbled cookies, then layer with the remaining batter.
  7. Bake for 40-45 minutes, until a toothpick comes out clean.
  8. Serve warm with vegan ice cream or whipped cream.
