- 2 lbs boneless, skinless chicken breasts
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 (4 oz) can diced green chilies
- 1 tsp cumin
- 1 tsp chili powder
- 1/2 tsp smoked paprika
- 1/4 tsp cayenne pepper (optional)
- 1/2 cup chicken broth
- 1/4 cup lime juice
- Salt and pepper to taste
Instructions
- Place the chicken breasts in the slow cooker.
- Add the chopped onion, minced garlic, and diced green chilies over the chicken.
- In a small bowl, mix together cumin, chili powder, smoked paprika, and cayenne pepper (if using). Sprinkle this seasoning mixture over the chicken.
- Pour the chicken broth and lime juice into the slow cooker. Season with salt and pepper.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is cooked through and tender.
- Remove the chicken from the slow cooker and shred it using two forks.
- Return the shredded chicken to the slow cooker and stir it into the sauce.

- For a spicier pulled chicken, add an extra pinch of cayenne pepper or a chopped jalapeƱo.
