Melt-In-Your-Mouth Salmon Rillettes are a luxurious treat made with poached salmon, butter, and herbs, perfect for entertaining.


Ingredients

  • 8 oz salmon fillet (skin removed)
  • 2 medium shallots (divided)
  • 1 cup dry white wine
  • 3 cups water
  • 1 tsp whole black peppercorns
  • lemon (zested and juiced)
  • 4 oz smoked salmon (roughly chopped)
  • 4 Tbsp unsalted butter (room temperature, divided)
  • 2 Tbsp sour cream
  • 2 Tbsp chives (thinly sliced)
  • 2 Tbsp fresh dill or parsley
  • 1 Tbsp capers (finely chopped)
  • 1 Tbsp extra virgin olive oil
  • ¼ tsp sweet paprika

Instructions

  1. Combine the poaching liquid: Mix 1 cup of dry white wine, 3 cups of water, 1 halved shallot, and 1 tsp of whole black peppercorns in a medium saucepan. Zest the lemon, squeezing its juice into the pan. Bring to a boil over high heat.
  2. Poach the salmon: Gently add the skinless salmon fillet to the boiling liquid. Cook for about 10 minutes, or until the salmon flakes easily. Transfer to a plate and discard the liquid.
  3. Sauté the shallots: Melt 1 Tbsp of butter in a skillet over medium heat. Mince the remaining shallot and cook for about 5 minutes until softened. Set aside to cool.
  4. Mix the rillettes: In a large mixing bowl, combine the remaining 3 Tbsp of butter, 2 Tbsp of sour cream, chopped smoked salmon, chives, dill or parsley, capers, olive oil, and sweet paprika. Add the reserved lemon zest and sautéed shallots. Mix gently until combined.
  5. Fold in the poached salmon: Add the flaked poached salmon to the mixing bowl and stir gently to combine.
  6. Chill the mixture: Transfer the salmon rillettes into 1 or 2 glass containers, sealing them with a lid or plastic wrap. Refrigerate for at least 2 hours.
