A hearty and comforting vegetarian lasagna packed with fresh vegetables and rich cheese.
Ingredients

- 9 lasagna noodles
- 2 cups ricotta cheese
- 2 cups shredded mozzarella cheese
- 1 cup grated Parmesan cheese
- 2 cups marinara sauce
- 1 zucchini, sliced
- 1 bell pepper, diced
- 1 cup spinach
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C).
- Cook lasagna noodles according to package instructions; drain.
- In a pan, heat olive oil and sauté zucchini, bell pepper, and spinach until soft.
- Spread a layer of marinara sauce on the bottom of a baking dish.
- Layer 3 lasagna noodles, half of the ricotta, half of the vegetable mixture, and a third of the mozzarella.
- Repeat the layers, finishing with noodles, sauce, and remaining mozzarella and Parmesan on top.
- Cover with foil and bake for 30 minutes, then remove foil and bake for another 15 minutes until cheese is bubbly.
- Let stand for 10 minutes before serving.
Notes
For added flavor, try adding herbs like basil or oregano.
