Description

A hearty and comforting vegetarian lasagna packed with fresh vegetables and rich cheese.


Ingredients

  • 9 lasagna noodles
  • 2 cups ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 2 cups marinara sauce
  • 1 zucchini, sliced
  • 1 bell pepper, diced
  • 1 cup spinach
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cook lasagna noodles according to package instructions; drain.
  3. In a pan, heat olive oil and sauté zucchini, bell pepper, and spinach until soft.
  4. Spread a layer of marinara sauce on the bottom of a baking dish.
  5. Layer 3 lasagna noodles, half of the ricotta, half of the vegetable mixture, and a third of the mozzarella.
  6. Repeat the layers, finishing with noodles, sauce, and remaining mozzarella and Parmesan on top.
  7. Cover with foil and bake for 30 minutes, then remove foil and bake for another 15 minutes until cheese is bubbly.
  8. Let stand for 10 minutes before serving.

Notes

For added flavor, try adding herbs like basil or oregano.
