Description

A comforting blend of meatloaf and creamy macaroni and cheese, perfect for family dinners.


Ingredients

  • 1 pound ground beef (or ground turkey for a healthier option)
  • 1 cup breadcrumbs (can substitute with gluten-free breadcrumbs)
  • 1/2 cup finely chopped onion
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 large egg (or a flax egg for a vegan option)
  • 1 teaspoon Worcestershire sauce
  • Salt and pepper to taste
  • 2 cups elbow macaroni (or any pasta of choice)
  • 2 cups shredded sharp cheddar cheese (substitute with vegan cheese if desired)
  • 2 cups milk (use almond or soy milk for lactose-free)
  • 1/4 cup unsalted butter (or vegan butter)
  • 1/4 cup all-purpose flour (can use whole wheat or gluten-free flour)
  • 1 teaspoon mustard powder
  • Additional shredded cheese for topping
  • Chopped parsley for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine ground beef, breadcrumbs, chopped onion, Parmesan cheese, minced garlic, egg, Worcestershire sauce, and seasonings. Mix until well combined.
  3. Shape the meat mixture into a loaf and place it in a greased baking dish. Bake for about 30 minutes, or until cooked through and no longer pink inside.
  4. While the meatloaf is baking, cook the elbow macaroni according to package instructions until al dente. Drain and set aside.
  5. In a pot, melt the butter over medium heat. Add the flour and stir for about a minute to create a roux. Gradually whisk in milk, stirring until thickened. Add the shredded cheddar cheese and stir until melted and smooth.
  6. Add cooked macaroni into the cheese sauce and mix until fully combined.
  7. Spread the macaroni and cheese mixture over the meatloaf. If desired, sprinkle additional cheese on top.
  8. Return to the oven and bake for an additional 15-20 minutes, or until cheese is melted and bubbly.
  9. Remove from the oven, cool for a few minutes, then slice and serve warm, garnished with parsley if desired.

Notes

Experiment with different types of meat and cheese for unique flavor variations. Make the meatloaf ahead of time and refrigerate it for quick preparation later.
