Description

Bright, lime-scented, and just a little boozy, these Margarita Balls put a fun twist on classic sugar cookies. Soft in the center and slightly crisp at the edges, they are rolled in powdered sugar for a candy-like finish.


Ingredients

  • 250 g (2 cups) all-purpose flour
  • 6 g (1¼ tsp) baking powder
  • 3 g (½ tsp) Diamond Crystal kosher salt
  • 113 g (½ cup) unsalted butter, softened
  • 30 ml (2 tbsp) vegetable oil
  • 200 g (1 cup) granulated sugar
  • 120 g (1 cup) powdered sugar (for rolling)
  • 1 large egg (50 g)
  • Zest from 2 limes (about 2 tbsp)
  • 30 ml (2 tbsp) lime juice
  • 30 ml (2 tbsp) tequila (blanco)
  • 5 ml (1 tsp) vanilla extract
  • Optional: fine sea salt for sprinkling

Instructions

  1. Mix the dry ingredients: Whisk flour, baking powder, and salt in a bowl until combined. Set aside.
  2. Cream butter, oil, and sugar: Beat the softened butter, vegetable oil, and granulated sugar until light and fluffy, about 2-3 minutes. Scrape the bowl to ensure even mixing.
  3. Add egg and flavorings: Mix in the egg, vanilla extract, lime zest, lime juice, and tequila until combined.
  4. Combine wet and dry ingredients: Add the dry ingredients in two additions and fold gently until no dry streaks remain.
  5. Chill the dough: Cover the dough and refrigerate for at least 30 minutes.
  6. Shape and coat: Preheat the oven to 175°C (350°F). Roll dough into balls and coat in powdered sugar.
  7. Bake: Bake for 10-12 minutes, until edges are set. Remove and let cool for 2 minutes on the sheet.
  8. Finish and cool: Roll cookies in powdered sugar again and transfer to a cooling rack to cool completely.

Notes

Avoid overbaking to maintain a tender texture. Store in an airtight container for up to 5 days or freeze for up to 3 months.
