Ingredients

  • 2 cups cocktail peanuts (or roasted unsalted peanuts)
  • ½ cup margarine (or butter, opt for light margarine for healthier option)
  • 1 cup evaporated milk (2% or skim milk can be used instead)
  • 2 cups powdered sugar (sift before using for best results)
  • 1 cup peanut butter (almond or sunflower butter can be substituted)
  • 1 teaspoon maple flavoring (or pure maple syrup for natural flavor)
  • 1 package vanilla pudding mix (use gluten-free version if necessary)
  • 1 cup milk chocolate chips (dark chocolate can be used for richer flavor)
  • 1 cup semi-sweet chocolate chips (white chocolate chips are an alternative)

Instructions

  1. In a large saucepan, combine ½ cup margarine, 1 cup evaporated milk, and 2 cups milk chocolate chips. Heat over medium-low, stirring frequently until the mixture is smooth and fully blended, about 5–8 minutes.
  2. Remove from heat and stir in 1 cup of peanut butter and 1 teaspoon of maple flavoring until well combined. Allow to cool for about 5 minutes.
  3. In a separate bowl, whisk together 2 cups of powdered sugar and 1 package of vanilla pudding mix. Gradually add this dry mixture to your cooled chocolate blend, stirring gently until everything is smooth.
  4. Gently fold in 2 cups of cocktail peanuts into the chocolate mixture, ensuring they are evenly distributed.
  5. Spread the mixture evenly into a greased 13×9-inch baking pan. Sprinkle 1 cup of semi-sweet chocolate chips on top and press them down slightly. Allow to cool at room temperature for about 2 hours.
  6. Once cooled, remove from the pan and cut into squares or bars. Serve and enjoy!
