  • 1.5 lbs fresh brussels sprouts, trimmed and halved
  • 6 slices thick-cut bacon, chopped
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • 1/4 cup pure maple syrup
  • 1.5 tablespoons bourbon
  • 1 tablespoon Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1/2 teaspoon garlic powder
  • Optional: red pepper flakes for subtle heat

Instructions

  1. Set oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. Toss brussels sprouts with olive oil, salt, and pepper. Spread evenly on the baking sheet.
  3. Sprinkle chopped bacon over the sprouts.
  4. Bake for 20–25 minutes, flipping halfway through until golden and crisp.
  5. In a small saucepan, combine maple syrup, bourbon, Dijon, vinegar, and garlic powder. Simmer for 4–5 minutes until slightly thickened.
  6. Drizzle the warm glaze over the roasted sprouts and bacon. Toss gently and serve immediately.
  7. Cook bacon in a skillet until crispy. Remove and set aside.
  8. Sauté brussels sprouts in remaining bacon fat for 8–10 minutes until caramelized.
  9. Reduce glaze separately for 4–5 minutes, then pour over sprouts and bacon. Toss to coat and serve.
