- 1.5 lbs fresh brussels sprouts, trimmed and halved
- 6 slices thick-cut bacon, chopped
- 2 tablespoons olive oil
- Salt and pepper, to taste
- 1/4 cup pure maple syrup
- 1.5 tablespoons bourbon
- 1 tablespoon Dijon mustard
- 1 tablespoon apple cider vinegar
- 1/2 teaspoon garlic powder
- Optional: red pepper flakes for subtle heat
Instructions
- Set oven to 425°F (220°C). Line a baking sheet with parchment paper.
- Toss brussels sprouts with olive oil, salt, and pepper. Spread evenly on the baking sheet.
- Sprinkle chopped bacon over the sprouts.
- Bake for 20–25 minutes, flipping halfway through until golden and crisp.
- In a small saucepan, combine maple syrup, bourbon, Dijon, vinegar, and garlic powder. Simmer for 4–5 minutes until slightly thickened.
- Drizzle the warm glaze over the roasted sprouts and bacon. Toss gently and serve immediately.
- Cook bacon in a skillet until crispy. Remove and set aside.
- Sauté brussels sprouts in remaining bacon fat for 8–10 minutes until caramelized.
- Reduce glaze separately for 4–5 minutes, then pour over sprouts and bacon. Toss to coat and serve.
