- 1/2 cup unsalted butter, melted
- 1 cup all-purpose flour
- 3/4 cup old-fashioned rolled oats
- 1/2 cup granulated sugar
- 1/4 cup light brown sugar, packed
- 1/2 teaspoon salt
- 2 cups coarsely chopped fresh ripe mango
- 1/3 cup granulated sugar (for filling)
- 2 tablespoons lemon juice
- 2 teaspoons cornstarch
Instructions
- Preheat your oven to 350°F (175°C).
- Line an 8-inch square pan with aluminum foil or parchment paper and spray with cooking spray.
- Melt the butter in a microwave-safe bowl.
- Combine melted butter with flour, oats, granulated sugar, brown sugar, and salt until crumbly.
- Set aside 1 cup of the mixture for topping and pack remaining into the bottom of the prepared pan.
- Mix the mango with 1/3 cup granulated sugar, lemon juice, and cornstarch in the same bowl.
- Spread the mango filling over the crust and top with reserved crumble mixture.
- Bake for 50 minutes or until edges are set and topping is golden brown.
- Allow to cool for at least 1 hour before slicing.
Notes
Experiment with seasonal fruits or add spices like cinnamon for varied flavors.
