Description

Delightful Mango Oatmeal Crumble Bars with a chewy crust, vibrant mango filling, and a crunchy topping.


Ingredients

  • 1/2 cup unsalted butter, melted
  • 1 cup all-purpose flour
  • 3/4 cup old-fashioned rolled oats
  • 1/2 cup granulated sugar
  • 1/4 cup light brown sugar, packed
  • 1/2 teaspoon salt
  • 2 cups coarsely chopped fresh ripe mango
  • 1/3 cup granulated sugar (for filling)
  • 2 tablespoons lemon juice
  • 2 teaspoons cornstarch

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Line an 8-inch square pan with aluminum foil or parchment paper and spray with cooking spray.
  3. Melt the butter in a microwave-safe bowl.
  4. Combine melted butter with flour, oats, granulated sugar, brown sugar, and salt until crumbly.
  5. Set aside 1 cup of the mixture for topping and pack remaining into the bottom of the prepared pan.
  6. Mix the mango with 1/3 cup granulated sugar, lemon juice, and cornstarch in the same bowl.
  7. Spread the mango filling over the crust and top with reserved crumble mixture.
  8. Bake for 50 minutes or until edges are set and topping is golden brown.
  9. Allow to cool for at least 1 hour before slicing.

Notes
