Ingredients

- 2 eggs
- ½ cup sugar
- ½ cup plain yogurt (or milk)
- ¼ cup vegetable oil
- 1 tsp vanilla extract
- 1 cup all-purpose flour
- 1 tsp baking powder
- Pinch of salt
- Optional: zest of ½ lemon or orange for a citrus twist
- Optional: topping: powdered sugar, jam swirl, or chocolate chips
Instructions
- Preheat & Prep – Heat oven to 180°C (350°F). Grease a small cake pan or line with parchment.
- Mix Wet Ingredients – In a bowl, whisk eggs, sugar, yogurt, oil, and vanilla until smooth.
- Add Dry Ingredients – Sift in flour, baking powder, and salt. Stir gently until just combined. Don’t overmix!
- Customize & Pour – Add zest or toppings if desired. Pour into pan and smooth the top.
- Bake Fast – Bake for 12–15 minutes or until golden and a toothpick comes out clean.
- Cool & Serve – Let cool slightly. Dust with powdered sugar or drizzle with honey. Serve warm or chilled.
