Ingredients

  • 8 oz elbow macaroni
  • 2 cups shredded sharp cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 3 cups milk
  • 1/4 cup butter
  • 2 1/2 tablespoons all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon paprika

Instructions

  1. Cook the macaroni in a large pot of salted boiling water until al dente, about 8-10 minutes. Drain and set aside.
  2. In a medium saucepan, melt the butter over medium heat. Stir in the flour to create a roux, cooking for about one minute.
  3. Gradually whisk in the milk, stirring continuously until the mixture thickens, about 5 minutes.
  4. Remove from heat and stir in the cheddar and Parmesan until melted and smooth.
  5. Fold the cheese sauce into the drained macaroni until well combined. Serve immediately or transfer to a baking dish and top with breadcrumbs for baking.
  6. If baking, preheat oven to 350°F (175°C) and bake for 10 minutes until golden and bubbly.
