- 8 oz elbow macaroni
- 2 cups shredded sharp cheddar cheese
- 1/2 cup grated Parmesan cheese
- 3 cups milk
- 1/4 cup butter
- 2 1/2 tablespoons all-purpose flour
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon paprika
Instructions
- Cook the macaroni in a large pot of salted boiling water until al dente, about 8-10 minutes. Drain and set aside.
- In a medium saucepan, melt the butter over medium heat. Stir in the flour to create a roux, cooking for about one minute.
- Gradually whisk in the milk, stirring continuously until the mixture thickens, about 5 minutes.
- Remove from heat and stir in the cheddar and Parmesan until melted and smooth.
- Fold the cheese sauce into the drained macaroni until well combined. Serve immediately or transfer to a baking dish and top with breadcrumbs for baking.
- If baking, preheat oven to 350°F (175°C) and bake for 10 minutes until golden and bubbly.
