- 4 low-carb tortillas
- 2 cups shredded rotisserie chicken
- 3/4 cup shredded Monterey Jack cheese
- 1 block cream cheese, softened
- 2 tablespoons butter
- 2 tablespoons flour
- 1–2 tablespoons taco seasoning
- 2 cups chicken broth
- 1/2 cup sour cream
- 1 can green chilies
Instructions
- Preheat the oven to 350°F and grease a 9×13 pan.
- Shred the cooked chicken and place it in a bowl; add cheese, garlic powder, and cream cheese, then mix well.
- In a saucepan, melt butter and stir in flour and taco seasoning, cooking for 1 minute.
- Gradually whisk in chicken broth until smooth; cook until thickened, then remove from heat and stir in sour cream and green chilies.
- Place chicken mixture in tortillas, roll them up, and place seam-side down in the baking dish.
- Pour sauce over enchiladas and top with remaining cheese. Bake for 22 minutes, then broil on high for 3 minutes until bubbly and golden.
Notes
For extra flavor, consider adding jalapeños or fresh cilantro as toppings.
