Description

Easy and healthy Low Carb White Chicken Enchiladas ready in just 30 minutes.


Ingredients

  • 4 low-carb tortillas
  • 2 cups shredded rotisserie chicken
  • 3/4 cup shredded Monterey Jack cheese
  • 1 block cream cheese, softened
  • 2 tablespoons butter
  • 2 tablespoons flour
  • 12 tablespoons taco seasoning
  • 2 cups chicken broth
  • 1/2 cup sour cream
  • 1 can green chilies

Instructions

  1. Preheat the oven to 350°F and grease a 9×13 pan.
  2. Shred the cooked chicken and place it in a bowl; add cheese, garlic powder, and cream cheese, then mix well.
  3. In a saucepan, melt butter and stir in flour and taco seasoning, cooking for 1 minute.
  4. Gradually whisk in chicken broth until smooth; cook until thickened, then remove from heat and stir in sour cream and green chilies.
  5. Place chicken mixture in tortillas, roll them up, and place seam-side down in the baking dish.
  6. Pour sauce over enchiladas and top with remaining cheese. Bake for 22 minutes, then broil on high for 3 minutes until bubbly and golden.

Notes

For extra flavor, consider adding jalapeños or fresh cilantro as toppings.
