Ingredients

  • 2 cups fresh broccoli florets (finely chopped)
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 2 large eggs
  • 1/4 cup almond flour (or coconut flour)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper (to taste)
  • Optional: Fresh herbs (like parsley or chives, for added flavor)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Steam or microwave the chopped broccoli florets until tender, about 3-4 minutes. Drain any excess water and let it cool slightly.
  3. Chop the broccoli finely if necessary.
  4. In a large mixing bowl, combine the chopped broccoli, shredded cheddar cheese, grated Parmesan cheese, eggs, almond flour, garlic powder, onion powder, salt, and pepper. Mix until well combined.
  5. Using your hands, form the mixture into small rounds or patties, about 1-2 inches in diameter, and place them on the prepared baking sheet.
  6. Bake in the preheated oven for 15-20 minutes, or until the rounds are golden brown and firm to the touch.
  7. Let the broccoli cheese rounds cool for a few minutes on the baking sheet before transferring them to a wire rack.
  8. Serve warm as a snack or appetizer. They can also be enjoyed with a dipping sauce like ranch or marinara!
