- 2 cups fresh broccoli florets (finely chopped)
- 1 cup shredded cheddar cheese
- 1/2 cup grated Parmesan cheese
- 2 large eggs
- 1/4 cup almond flour (or coconut flour)
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper (to taste)
- Optional: Fresh herbs (like parsley or chives, for added flavor)
Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Steam or microwave the chopped broccoli florets until tender, about 3-4 minutes. Drain any excess water and let it cool slightly.
- Chop the broccoli finely if necessary.
- In a large mixing bowl, combine the chopped broccoli, shredded cheddar cheese, grated Parmesan cheese, eggs, almond flour, garlic powder, onion powder, salt, and pepper. Mix until well combined.
- Using your hands, form the mixture into small rounds or patties, about 1-2 inches in diameter, and place them on the prepared baking sheet.
- Bake in the preheated oven for 15-20 minutes, or until the rounds are golden brown and firm to the touch.
- Let the broccoli cheese rounds cool for a few minutes on the baking sheet before transferring them to a wire rack.
- Serve warm as a snack or appetizer. They can also be enjoyed with a dipping sauce like ranch or marinara!
