- 1 pound lobster meat, cooked and chopped
- 1 cup heavy cream
- 1 cup chicken or seafood broth
- 1 cup diced potatoes
- 1 cup frozen peas
- 1 cup diced carrots
- 1/2 cup diced onion
- 1/4 cup all-purpose flour
- 2 tablespoons butter
- 1 tablespoon fresh parsley, chopped
- 1 teaspoon thyme, dried
- Salt and pepper, to taste
- 1 package refrigerated pie crusts (2 crusts)
- 1 egg, beaten (for egg wash)
Instructions
- Preheat your oven to 425°F (220°C).
- In a large skillet, melt the butter over medium heat. Add the onions, carrots, and potatoes. Sauté for about 5 minutes until they start to soften.
- Sprinkle the flour over the sautéed vegetables and stir well to combine. Cook for an additional 2 minutes.
- Gradually stir in the chicken or seafood broth and heavy cream. Bring to a simmer, allowing the mixture to thicken.
- Once thickened, add the lobster meat, frozen peas, parsley, thyme, salt, and pepper. Mix well and remove from heat.
- Roll out one pie crust and place it in a 9-inch pie dish. Pour the lobster filling into the crust.
- Roll out the second pie crust and place it over the filling. Seal the edges by crimping with a fork. Cut slits in the top crust to allow steam to escape.
- Brush the top crust with the beaten egg to give it a golden color when baked.
- Place the pie in the preheated oven and bake for 30-35 minutes or until the crust is golden brown.
- Remove from the oven and let it cool for 15 minutes before serving.
