Lobster Pot Pie: An Amazing Ultimate Seafood Recipe


Ingredients

  • 1 pound lobster meat, cooked and chopped
  • 1 cup heavy cream
  • 1 cup chicken or seafood broth
  • 1 cup diced potatoes
  • 1 cup frozen peas
  • 1 cup diced carrots
  • 1/2 cup diced onion
  • 1/4 cup all-purpose flour
  • 2 tablespoons butter
  • 1 tablespoon fresh parsley, chopped
  • 1 teaspoon thyme, dried
  • Salt and pepper, to taste
  • 1 package refrigerated pie crusts (2 crusts)
  • 1 egg, beaten (for egg wash)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a large skillet, melt the butter over medium heat. Add the onions, carrots, and potatoes. Sauté for about 5 minutes until they start to soften.
  3. Sprinkle the flour over the sautéed vegetables and stir well to combine. Cook for an additional 2 minutes.
  4. Gradually stir in the chicken or seafood broth and heavy cream. Bring to a simmer, allowing the mixture to thicken.
  5. Once thickened, add the lobster meat, frozen peas, parsley, thyme, salt, and pepper. Mix well and remove from heat.
  6. Roll out one pie crust and place it in a 9-inch pie dish. Pour the lobster filling into the crust.
  7. Roll out the second pie crust and place it over the filling. Seal the edges by crimping with a fork. Cut slits in the top crust to allow steam to escape.
  8. Brush the top crust with the beaten egg to give it a golden color when baked.
  9. Place the pie in the preheated oven and bake for 30-35 minutes or until the crust is golden brown.
  10. Remove from the oven and let it cool for 15 minutes before serving.
